Cauliflower Rice

Cauliflower is a great source of fibre, choline, vitamin B6, folate and vitamin C. It’s also high in minerals including zinc, phosphorus, selenium and sodium. All of these essential nutrients are needed to support the healthy growth and development of your baby during pregnancy. Cauliflower is also an excellent source of antioxidants, which will help boost your immunity.

Ingredients

1 head cauliflower, chopped into large pieces

1 tbsp olive oil or coconut oil

salt and pepper to taste

Method

Place the cauliflower in a food processor or high speed blender and pulse until finely chopped or it has a texture like rice.

Heat the oil in a large frying pan over medium heat.

Add the cauliflower to the pan, season with salt and pepper, and sauté for about 10 minutes, or until just tender.

Substitute the cauliflower rice for rice, pasta, cous cous, quinoa. It’s a fibre-rich and nutrient-dense side dish that’s an ideal part of a pregnancy diet.
