Chia Raspberry Jam

Sometimes, you just feel like jam on toast. This is the healthy way to enjoy a little bit of sweetness without sending your blood sugar levels skyrocketing. Once you’ve made this healthy pregnancy recipe, you won’t want to buy jam from the supermarket again.

| Makes 1 cup |

Ingredients

2 cups frozen raspberries (or berries of choice)

2 tbsp chia seeds

2 tbsp maple syrup or raw honey (optional)

2 tbsp water

1 tbsp coconut oil

1 vanilla pod, insides scraped out or ½ tbsp vanilla extract

Method

In a small saucepan combine all ingredients, place over medium heat and bring to the boil.

Turn heat down and simmer for around 10 mins, stirring through occasionally.

Serve immediately, store in a jar or airtight container in the fridge for up to 2 weeks or freeze for up to 4 months.
