Mango and Avocado Salad

The combination of sweet mango with creamy avocado is heavenly. Make this salad your own by using whatever nuts you have on hand and mixing together a variety of leafy greens. Fresh, light, crunchy and nutritious this recipe is delightful with grilled chicken (hot or cold).

Ingredients

2 avos

2 mangoes, skin off and cut away from the stone

1/2 cup walnuts or pecans

3 bacon rashers, sliced and cooked

1 mignonette lettuce

Dressing

1/4 cup olive oil

2 tabs lemon juice

1 tsp french mustard

1 tbsp greek yoghurt

Method

Once the bacon has been cooked assemble the salad ingredients on a platter. Mix the dressing ingredients in a bowl and pour over salad to serve.
