Healthy Apple Pancakes

Who doesn’t love pancakes! And when they taste this good and are this healthy, there’s every reason to enjoy them on a regular basis. These pancakes are sweetened with grated apple, are high in fibre, protein, vitamins A and C, calcium, magnesium and iron. We have been making this recipe for years and every time we end up with fluffy and scrumptious pancakes the whole family can enjoy.

Ingredients

¾ cup gluten free flour* or spelt flour

¾ cup almond meal

1 tbsp ground flaxseeds or chia seeds

1 tsp aluminium free baking powder

40g melted butter or melted coconut oil

1 cup almond or coconut milk

2 eggs

2 apples, grated

pinch cinnamon

*We make our own gluten free flour mix consisting of equal parts arrowroot flour, buckwheat flour and millet flour

Method

Add the dry ingredients to a large bowl and stir to combine. Add the melted butter, milk and eggs and stir until a batter forms. Add the grated apples and cinnamon and mix through the batter.

Heat a little butter in a pan over medium heat. Once the pan is hot, add spoonfuls of the pancake batter and fry on both sides.

Serve with your choice of toppings: Greek or coconut yoghurt, fresh fruit, berry compote, fresh lemon juice, maple syrup or honey.
