Super Quick and Healthy Chocolate Brownies

 

These brownies are an ideal pregnancy snack. They’re packed with protein, high in folate and a good source of iron and fibre. You won’t need to feel guilty about enjoying a square of these chocolate brownies, especially if you sub the raw cacao for carob powder. Carob is caffeine free, gluten free, contains calcium, antioxidants and is high in fibre. Carob powder is naturally sweet so you may wish to use less sugar if you choose to omit the raw cacao from this recipe.

Ingredients

400g canned black beans, rinsed and drained

3 eggs

3 tbsp coconut oil

⅓ cup raw cacao powder

2 tbsp carob powder*

pinch sea salt

3 tsp vanilla extract

1 tsp baking powder

¼ - ½ cup coconut sugar

*make these brownies caffeine free by omitting the raw cacao powder and only using carob powder (they’re just as tasty made only with carob powder)

Method

Preheat the oven to 160°C. Line a square 20cmx20cm baking dish with baking paper.

Add all the ingredients to a blender and process at a high speed until smooth.

Pour the mixture into the prepared baking dish, place in the oven and bake for 20-25 mins.

Allow to cool before cutting into little squares.

Enjoy them fresh or freeze them for a later time.
