Green Bean Chickpea Apple Salad
We love adding apples to salads. In this recipe, Jacqueline Alwill, Accredited Nutritional Medicine Practitioner, has paired fresh green apple with crispy green beans, chickpeas and a creamy yoghurt dressing. The combo is sublime and super nourishing for you and your baby.

Ingredients
300g green beans, trimmed, blanched and refreshed
120g cooked chickpeas
2 spring onions, white part finely chopped
⅓ cup almonds, chopped and toasted
1 green apple, sliced into thin sticks
2 tbsp finely sliced mint
3 tbsp finely chopped parsley
2 tsp nigella seeds (optional)
Dressing
⅔ cup natural yoghurt or ½ coyo for vegan
1 tsp honey or maple for vegan
2 tbsp extra virgin olive oil
1 tbsp lemon juice
salt and pepper to taste
Method
Whisk together all ingredients for the dressing and set aside.
In a large bowl, toss all ingredients for salad together, keeping a small amount of almonds to garnish. Then season with sea salt and black pepper.
Pour salad dressing over and toss to coat.
Scoop onto a serving plate and sprinkle almonds to garnish. Serve and enjoy.
