Avocado and Macadamia Salsa

 

This avocado and macadamia salsa makes a great dip for home made popcorn chicken, sweet potato chips or raw vegetables. This salsa or pesto is so flavoursome and nutritionally rich. Avocado contains 19 different nutrients, is a source of healthy fats along with the macadamia nuts. The fresh basil and parsley are also loaded with essential pregnancy nutrients such as vitamin C, vitamin A, folate, vitamin K, zinc, calcium, magnesium, potassium and dietary fibre.

Ingredients

3 avocados

240 g (1½ cups) toasted macadamia nuts

4 garlic cloves, grated

juice of 3 limes

1 bunch fresh parsley, stems trimmed

1 bunch fresh basil, leaves picked

sea salt and freshly ground black pepper to taste

Method

Add all the ingredients to a food processor and pulse until well combined.
