Nourish Pregnancy Bar
Rich in iron, B vitamins, calcium and magnesium these bars are a delicious and healthy pregnancy snack. These are great any time during pregnancy and also during labour.

Ingredients
250g coconut flour
125g rolled oats
50g ground almonds or almond meal
50g linseeds
50g sesame seeds
50g sunflower seeds
125g organic dried apricots, finely chopped
200g organic cranberries, currants or raisins
1 tsp mixed spice
3 pieces crystallised ginger, finely chopped (optional)
3 tbsp apple juice or filtered water
600ml almond or coconut milk
1 tbsp maca powder (optional)
25g flaked almonds
nut butter to serve
Method
Preheat oven to 180°C and line a loaf tin with baking paper.
Add all the ingredients, except for the flaked almonds, into a bowl and stir to combine.
Pour over the apple juice, milk and maca powder and mix together. Set aside for 45 minutes.
Pour the mixture into the tin and level with a spoon. Scatter over the almonds and bake for 35-45 minutes or until a skewer comes out clean.
Allow to cool slightly in the tin then transfer to a wire rack.
Slice and serve with nut butter.
The bars can be frozen for up to 3 months.
