Seed Crackers

 

Keep these seed crackers by your bed or in your handbag for an easy go-to-morning-sickness snack. These crackers will satisfy your craving for carbs without raising your blood sugar and delivering much needed nutrients.

| Makes 50 crackers |

Ingredients:

¼ cup pumpkin seeds

¼ cup flaxseeds

¼ cup sunflower seeds

¼ cup sesame seeds

¼ cup chia seeds

1 cup spelt flour

½ cup filtered water

¼ cup extra virgin olive oil

Method:

Preheat oven to 160°C (320°F).

Add the five types of seeds to a high speed food processor and pulse until smooth.

Add remaining ingredients and process until combined.

Place the seed mixture between two sheets of baking paper and roll until 3-4mm thick. Transfer to a lined baking tray and bake for 20 minutes or until crisp.

Allow to cool before breaking into pieces. These seed crackers can be stored in an airtight container for up to 14 days.

Enjoy with your favourite dip or to keep nausea and morning sickness at bay.
