Sweet Potato and Pear Soup

 

During the cooler months, there's nothing better than indulging in warm, wholesome food that not only tastes delicious but also nourishes and supports your body and your growing baby.

This nourishing Sweet Potato and Pear Soup soup is super easy to make, anti-inflammatory, gut healing and packed with essential pregnancy nutrients.

In fact, sweet potato is incredibly rich in beta carotene, a compound that protects the body from free radical damage and support normal organ development in your growing baby. It also contains high amounts of vitamin C, B6 and Potassium which are important for immune function, energy production, nervous system development, the formation of healthy skin, teeth and bones, and heart health.

Bone broth is also loaded with benefits. It provides collagen, which supports hair, skin, nail and gut health, helps prevent stretch marks, as well as glucosamine and chondroitin that support joint health and can help relieve joint pain.

Ingredients

800g sweet potatoes, peeled, and cut into 2 cm chunks
2 pears, peeled, cored, and cut into 2 cm chunks
1 brown onion, finely chopped
2 garlic cloves, finely diced
2 tbsp coconut oil, or olive oil
700ml beef bone broth or vegetable broth
¼ cup coconut yoghurt, plus extra for drizzle
1 tbsp pumpkin seeds (pepitas), to garnish

Method

Place the oil in a large saucepan over a medium heat.

Add the onion and garlic, and cook for 2-3 minutes, or until the onion has softened but not browned.

Add the sweet potatoes and pear, and cook for 1-2 minutes, stirring constantly to prevent the potatoes from burning.

Add the broth to the saucepan and bring to a boil, then cook for 25 minutes, or until the sweet potatoes and pear have softened.

Remove from heat and allow to cool slightly, then place the mixture into a blender or food processor and blend, in batches, until smooth and creamy.

Return the blended mixture to the pan, stir in the coconut yoghurt, and gently reheat. Do not boil.

Spoon into bowls of your choice, garnish with pumpkin seeds (pepitas) and a drizzle of coconut yoghurt.
