Turmeric Mince with Sneaky Greens

 

This dish comes together quickly and easily and will be sure to satisfy the tastebuds. Supercharged with greens and green beans, this pregnancy recipe is highly nutritious for you and your baby. Enjoy it as is or serve with rice, quinoa or a colourful selection of steamed vegetables.

Ingredients

500g organic or grass-fed lamb or beef mince

1 large zucchini, thinly sliced into rounds

1 tbsp turmeric powder (we love Zandi Organics Turmeric)

salt and pepper to taste

1 tsp paprika powder

1 tsp ground cumin

3 cloves of garlic, crushed

½ to 1 onion, finely diced

2 cups green beans, ends trimmed

3 to 4 cups of rocket or spinach

2 to 3 rashers of bacon (preservative free), diced

coconut oil, organic butter or ghee for cooking

Method

Add the onion, sliced zucchini and bacon to a large frying pan with a small amount of coconut oil and fry until golden.

Scoop this mixture into a bowl leaving as much fat in the frying pan as possible.

Add the mince and garlic to the frying pan and cook until browned all over.

Add the spices, salt and pepper and stir until evenly combined.

Add the cooked onions, bacon and zucchini mix back into the frying pan and stir well.

Turn off the heat, stir through the spinach leaves until wilted.

Meanwhile, steam the green beans in a separate pot. Then add them to the frying pan and toss to combine.

Serve with rice, steamed or roast veg, or any of these green side dishes.
