Nutty Bircher Muesli

 

This nutty bircher muesli is immensely satiating, and fresh and light at the same time. A wonderful way to start your day.

Ingredients

For dry mixture

1 cup chia seeds

½ cup activated almonds

½ cup activated walnuts

¼ cup pumpkin seeds

¼ cup sunflower seeds

¼ cup coconut chips (or shredded coconut)

To serve, for 2 people

1 green apple, grated

zest and juice from half an orange or lemon

1 tbsp of coconut yoghurt or greek yoghurt to serve

Method

Briefly chop the nuts in a food processor or high speed blender, being sure to leave them chunky.

Combine all the dry ingredients in an airtight container and store for 2-3 weeks.

To prepare, add grated apple, orange juice and zest to 1 ½ cups of dry mixture (serves 2).

Serve with coconut or greek yoghurt and top with your choice of fresh fruit.

*Feel free to add more nuts to the mix, such as a ¼ cup each of brazil nuts and pecans.
