Chicken Herb Loaf

 

Rich in protein and choline, vitamin K and potassium, this Chicken Herb Loaf is delicious hot or cold and freezes well. It’s a tasty alternative to traditional meatloaf and bound to be as popular around the dinner table.

Ingredients

4 chicken breasts, minced

3 eggs, lightly beaten

1 onion, finely chopped

2 cloves garlic, crushed

1 zucchini, grated

1 carrot, grated

½ cup frozen peas

½ cup fresh basil, chopped

½ cup fresh parsley, chopped

Method

Preheat oven to 160°C.

In a frypan, sauté onion and garlic until onion is translucent. Mix all ingredients together in a bowl then press into a baking dish.

Bake for 30-40 minutes or until cooked through. Cut into slices and serves with a plate full of veggies, a big salad or just on it’s own as a snack.

Store in an airtight container in the fridge or freezer.
