Brussels Sprouts with Bacon and Garlic

 

A member of the cruciferous vegetable family along with kale, cauliflower and broccoli, Brussels sprouts are full of vitamins K, C and A as well as loads of essential minerals. This recipe can be enjoyed for breakfast beside an egg or as a tasty side dish at dinner time.

Ingredients

1 tbsp ghee or butter

200g bacon (nitrate free), roughly chopped

600g brussels sprouts, halved

6 garlic cloves, sliced

60ml chicken stock

1 lemon, zest only, finely grated

chilli flakes to serve (optional)

Method

In a large frying pan, heat the ghee or butter over medium heat. Add the bacon and cook, stirring occasionally, until the bacon starts to brown.

Add the brussels sprouts and garlic and cook for 2 minutes or until the brussels sprouts and garlic turn golden. Pour in the chicken stock and cook, stirring occasionally, until the Brussels sprouts are tender. Approximately 20 minutes.

Sprinkle with lemon zest and chilli flakes, if using.
