Granny's Granola

 

This recipe is a family favourite. It’s delicious, turns out every time and it’s loaded with nutrients to support your pregnancy. Rich in omega-3 fatty acids, fibre, minerals, iron, protein. Make a big batch and store in an airtight container. This granola will keep for weeks and makes for a super easy breakfast or snack option.

Ingredients

100g organic coconut oil

1-2 tbsp maple syrup

2 tsp cinnamon

1 tbsp vanilla extract

1-2 egg whites, whisked

100g organic rolled oats

400g variety of nuts, roughly chopped

big handful each of pepitas and sunflower seeds

½ cup organic coconut*, shredded

80g ground flaxseed

2 tbsp chia seeds

1 tsp sea salt

Method

Combine the dry ingredients in a bowl.

Heat oil and maple syrup in saucepan over low-medium heat, until melted. Stir in the vanilla extract.

Allow to cool slightly before mixing through the dry ingredients.

Distribute evenly on a baking tray lined with baking paper. Bake at 100°C for 1.5 hours, stirring occasionally.

Serve with your favourite yoghurt and top with fresh berries and season fruit. Enjoy.
