Meatballs

 

This is the best meatballs recipe you’ll ever taste! It’s full of flavour and, of course, essential pregnancy nutrients. These meatballs are rich in zinc, iron, vitamin B12 and beta-carotene.

Ingredients

500g beef mince

⅓ cup (180g) sweet potato, steamed and mashed

½ brown onion, finely diced

2 eggs

1 tbsp Dijon mustard

1 tbsp tamari

salt and pepper to taste

Method

Combine all the ingredients in a large bowl, using your hands.

Heat oil in a frying pan on medium heat.

Roll beef mix into patties, and cook for 3-5 minutes each side in multiple batches. You could also bake them in the oven at 180°C for 20 minutes, turning once.

Serve with a plate of steamed vegetables, your favourite salad, with spaghetti or in a gluten-free burger bun with beetroot, lettuce, avocado, cucumber.
