Slow Cooker Beef Curry
This dish tastes particularly good on a cooler evening. Warming and satisfying, it’ll nourish you and your baby with all the iron and protein you need for a healthy pregnancy.

Ingredients
1kg diced chuck steak, brisket or oyster steak
400ml organic coconut cream
2 tbsp tomato paste
1 brown onion, finely diced
2 garlic cloves, crushed
1 lemon, juiced
¼ tsp turmeric (fresh or powder)
¼ tsp garam masala
¼ tsp ginger (fresh or powder)
¼ tsp cardamom powder
¼ tsp cumin
¼ tsp ground coriander
¼ tsp chilli powder (optional)
2 carrots, cut into thick chunks
1 sweet potato or 3 potatoes, cut into thick chunks
Method
Simply add all the ingredients to a slow cooker and stir well to combine. Cook for 6-8 hours on low.
Serve with your choice of cauliflower rice, brown rice, quinoa, mashed sweet or white potato and a big pile of steamed green vegetables on the side.
