Overnight Oats with Fresh Berries

 

How good is a make-ahead breakfast? This pregnancy dish is filled with important nutrients like soluble fibre, calcium, vitamins C and K, and omega-3 fats. A delicious, nutritious and easy way to start your day.

Ingredients

1 cup rolled or wholegrain oats

1 tbsp chia seeds

½ tsp fresh orange or lemon zest

2 cups almond milk

Fresh berries, nuts and seeds to serve

Method

Combine the oats, chia seeds, zest and milk in a jar or bowl and stir to combine.

Cover and store in the fridge overnight.

In the morning, simply top with fresh fruit, chopped nuts and a sprinkle of seeds and a nourishing and satiating breakfast is served.

N.B. Make these overnight oats with coconut milk and stir through 2 tablespoons of shredded coconut for a different flavour combination.
