Prune and Orange High-Fibre Muffins

 

These muffins are loaded with fibre from the prunes, spelt flour and oat bran. And are naturally sweetened with orange juice. If you’re experiencing constipation during your pregnancy, these would be a great addition to your diet.

Ingredients

280g pitted prunes, roughly chopped (preservative free)

1 cup freshly squeezed orange juice (from 2 oranges)

grated rind of 1 orange

¼ cup water

1 tsp natural vanilla essence

40g organic butter or coconut oil

½ tsp bicarbonate soda (aluminium free)

¼ cup rice milk or almond milk

1 tbsp honey

2 large eggs (or 3 small ones), lightly beaten

2 cups wholegrain spelt flour

¼ cup oat bran

3 tbsp baking powder (aluminium free)


Method

Preheat oven to 190°C and grease a 12 hole muffin tin.

Add the prunes, orange juice, orange rind, vanilla and butter/oil to a small saucepan. Bring to the boil, reduce heat and simmer for 3-4 minutes.

Turn off heat and allow to cool slightly, then stir through bicarbonate soda. Let stand.

Meanwhile, add the flour, baking powder and oat bran to a large bowl and stir to combine.

To the prune mix, add honey and milk and stir. Once the mix is cool enough to touch, stir through the eggs.

Add wet mixture to dry ingredients in the bowl, and stir gently until well combined.

Spoon mixture into the greased muffin tin. Place in the oven and bake for 20-30 minutes, or until a skewer comes out clean.

Remove from oven and let muffins sit in the tray for a few minutes before removing and placing on a cooling rack.
