Chocolate Seed Slice

 

You can feel good about snacking on this slice. It is a powerhouse of essential pregnancy nutrients and an excellent source of potassium, vitamin E, phosphorus, manganese, selenium, magnesium, zinc, folate, iron, vitamin B6, calcium and fibre.

Ingredients

1 cup sunflower seeds

1 cup pumpkin seeds or pepitas

½ cup chia seeds

¼ cup linseed

¼ cup sesame seeds

¼ cup shredded coconut

½ cup coconut oil

1-2 tbsp rice malt syrup

2 tbsp raw cacao powder

Method

Add the sunflower seeds, pepitas and linseed into a high speed food processor or blender and pulse until chopped well.

Empty into a mixing bowl.

Then add the chia seeds, sesame seeds and shredded coconut and stir to combine.

In a saucepan over low heat, melt and combine the coconut oil, rice malt syrup and raw cacao. Stir continuously until the rice malt syrup has melted.

Pour the chocolate mixture over the seed mixture and stir well. Empty the mixture into a baking tin lined with baking paper and press it down until even.

Place the baking tin into the freezer and allow to set for 30 minutes.

Take it out of the freezer, cut into 12 slices and store in an airtight container in the fridge. Enjoy in moderation.
