Avocado on Toast (three ways)

 

These recipes take avocado on toast to a whole new level. The flavour combinations are super tasty and, of course, nutritious. A great way for you to enjoy all the goodness of avocados while you’re pregnant.

Nectarine and Avocado Toasties

Ingredients

| Serves 1 |

2 slices sourdough bread

1 ripe avocado

½ ripe nectarine

½ lime

60g crumbled feta (pasteurised)

½ to 1 tsp poppy or sesame seeds

pinch dried chili flakes

2 tbsp slivered almonds

salt and pepper to taste

olive oil to drizzle over

Method

Line a baking tray with baking paper. Place the bread slices on the lined tray.

Slice the nectarine into 10-12 slices.

Add the avocado to a bowl, add a squeeze of lime and mash it roughly with a fork.

Spread the avocado over both slices of bread. Sprinkle over the poppy or sesame seeds, crumbled feta and almonds. Lay the nectarine slices on top and sprinkle with chili flakes. Season with salt and pepper.

Place the baking tray under the grill for 2-3 minutes.

Remove from the grill, drizzle over a small amount of olive oil, and enjoy.

Strawberry Basil Avocado Toast

| Serves 1 |

Ingredients

2 slices sourdough bread

⅓ avocado

1/4 cup strawberries, sliced

30g goat's feta (pasteurised)

pepper to taste

drizzle of olive oil

hemp seeds for extra protein (optional)

Method

Toast the bread under the grill on one side only.

Spread the untoasted side with the avocado, top with the sliced strawberries and cheese, and put it back under the grill until the cheese browns.

Serve with plenty of freshly cracked pepper and a drizzle of olive oil.

Moroccan Avocado Toasties

| Serves 1 |

Ingredients

400g canned chickpeas, drained and rinsed

2 tbsp olive oil

1 garlic clove, crushed

2 tbsp natural yoghurt

2 slices sourdough, toasted

½ tsp paprika

½ avocado, sliced

2 organic hard boiled eggs, cut in quarters

Method

Add half the chickpeas to a small pan along with the olive oil, garlic and a splash of water. Cook until warmed through.

Season with paprika, salt and pepper and mash roughly with a fork. Then mix in the rest of the chickpeas and the yoghurt.

Spread the chickpea mixture onto two pieces of toasted sourdough. Top with slices of avocado, the hard-boiled eggs and a sprinkle of paprika. Enjoy.
