Green Sauce

 

This green sauce is extremely versatile. It’s quick and easy to make and can be drizzled over vegetables, used to dress a salad, tossed through some pasta, or enjoyed with a piece of steak, chicken or fish. Packed with nutrients, this is an easy way to ensure you’re nourishing yourself and your baby adequately during pregnancy.

Ingredients

1 avocado

½ lemon, juiced

two bunches fresh herbs of your choice: flat leaf parsley, coriander, basil

1-2 cups baby spinach

½ cup toasted nuts and seeds of your choice: pumpkin seeds, sunflower seeds, sesame seeds, walnuts, macadamias, cashews

1 clove of garlic

olive oil

salt and pepper to taste

Method

Blend the avocado, lemon juice, parsley, coriander and/or basil, baby spinach, toasted nuts, clove of garlic and a dash of olive oil in a high speed blender or food processor.

Season to taste, adding lemon juice and olive oil until the sauce reaches a creamy consistency.

Store the green sauce in an airtight container in the fridge for up to 3 days.

Stir through gluten free or kelp pasta, drizzle over your favourite roasted vegetables, use it to dress a salad, or serve alongside a piece of steak, chicken or fish. Also delicious stirred through scrambled eggs.
