Turmeric Cauliflower

 

Inspired by a Lee Holmes recipe, this cauliflower dish is a colourful addition at meal time. Cauliflower is a cruciferous vegetable that’s naturally high in fibre and B-vitamins. It contains choline and many other nutrients essential during pregnancy.

Ingredients

1 cauliflower broken into florets

½ lemon squeezed

1 tbsp nutritional yeast

1 tsp Zandi Organics Turmeric Wellness Blend (or turmeric powder)

2 garlic cloves, crushed

2 tbsp olive oil

Method

Preheat the oven to 190°C (375°F).

Combine the lemon juice, nutritional yeast, turmeric powder, garlic and olive oil to create a marinade.

Coat the cauliflower in the marinade.

Bake the cauliflower for about 35 minutes or until browned.

Enjoy as is or toss through a salad of toasted nuts, cranberries, leafy greens and fresh mint.
